Cut up vegetables including okra, anchova (eggplant), table squash, pumpkin, and spinach.
Boil salted pigtails to remove excess salt, keeping some for flavor.
Prepare chicken by washing and seasoning with all-purpose seasoning, seasoned salt, and black pepper.
Heat a pot and melt butter, then add the chopped vegetables and cook until soft.
Add boiled salted pigtails to the pot and cover for 2-3 minutes to sweat them down.
Add seasoned chicken to the pot, cover, and let it steam on low heat for 10 minutes without adding liquid.
Add all the vegetables to the pot, then pour in enough water to cover them.
Add one maggi cube for flavoring and mix well before covering the pot to cook.
After 30 minutes, check the pot and note how the vegetables have cooked down significantly.
Prepare dumplings using all-purpose flour, cornmeal, salt, butter, and water to bind.
After about an hour of cooking, remove some greens to mash them for a finer texture in the dish.
Return the mashed greens to the pot and add dumplings to thicken the mixture.
Add one more maggi cube for additional seasoning as needed.
