Cashew Tofu Stir Fry

1 block (14 oz) firm tofu, drained and pressed
1 cup cashews, raw or roasted
2 cups mixed vegetables (bell peppers, broccoli, carrots)
3 tablespoons soy sauce
2 tablespoons sesame oil
2 cloves garlic, minced
1 inch ginger, grated
1 tablespoon cornstarch
1/4 cup water
1 teaspoon red pepper flakes (optional)
Salt and pepper to taste

Cut the pressed tofu into bite-sized cubes.

In a bowl, toss the tofu cubes with cornstarch until evenly coated.

Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.

Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.

In the same skillet, add the remaining sesame oil, garlic, and ginger. Sauté for 1-2 minutes until fragrant.

Add the mixed vegetables to the skillet and stir-fry for about 3-4 minutes until they are tender-crisp.

Return the tofu to the skillet and add the cashews, soy sauce, and water. Stir well to combine.

If using, add red pepper flakes for heat and season with salt and pepper to taste.

Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
