Boil water in a pot over medium heat.

Crack 5 eggs and separate the egg yolks from the whites in your glass bowl, save the whites for another dish.

When the pot is at a rolling boil, put the glass bowl over the opening of the pot, make sure steam does not get in contact with the egg.

Add a splash of white wine and start whisking. Every minute or so, slowly add one tablespoon of butter to your egg yolks. Continue to whisk fervently so that the butter and yolk mix well. When finished with the butter, splash lemon juice, and salt/pepper to your taste.

Set aside and stir the mixture every so often. The texture will become like custard over time.

Put a frying pan with oil on medium heat.

When hot, add your choice of meat (the video uses prosciutto).

Set the meat aside and use the remnants to flavor your choice of bread, you can also add butter to give your bread base more flavor (the video uses English muffins).

Plate your meat over the muffins.

Add a splash of vinegar to your boiling pot of water and turn the heat to mid low.

Crack an egg into a small bowl, spin the water in the pot with the slotted spoon and gently drop the egg into the whirlpool (you can poach multiple eggs based on the size of your pot, cook time 2-3 minutes).

Use your slotted spoon to transfer the poached egg onto a paper towel for drying.

Add your egg onto your layered bread and finish with a spoonful of hollandaise.
