1

Prepare the pasta by bringing a large saucepan of water to a boil and adding some salt.

2

Add the tagliatelle to the boiling water and cook according to the package instructions.

3

Tip: If using fresh pasta, make the sauce ahead of time since it only takes a minute or two to cook. Do not overcook the pasta.

4

While the pasta is cooking, prepare the sauce in a saucepan by melting the butter and adding the chopped shallots.

5

Pour in the cream and season with salt and black pepper. Let it come to a boil and cook for a few minutes while stirring occasionally.

6

Remove the sauce from the heat and add half of the grated parmesan cheese, mixing it in and setting it aside.

7

Once the pasta is cooked, drain it and return it to the saucepan.

8

Add the prepared sauce to the pasta along with the chopped parsley and mix well.

9

Spoon the tagliatelle onto a serving plate, drizzle a little truffle oil on top, and garnish with more parmesan cheese.

10

Serve immediately, optionally with some crusty bread.
