1

In a large bowl, combine 2 pounds of ground turkey with 2 fresh eggs, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of paprika.

2

Grate 1 onion and add it to the bowl.

3

Finely chop a fresh bunch of parsley and add it in.

4

Mix everything thoroughly using your hands.

5

Sprinkle in 60 grams of breadcrumbs and combine well.

6

Set aside the mixture while preparing the potatoes.

7

Place 5 medium-sized potatoes in a pot and cover with water, adding 1 teaspoon of salt.

8

Cover and cook on medium heat for 30-40 minutes until soft.

9

On a sheet of parchment paper, spread the turkey mixture into a neat rectangle.

10

Melt 30 grams of butter in a frying pan and grate 2 cloves of garlic, frying until fragrant.

11

Finely chop 5 ounces of spinach and sauté with the garlic until tender.

12

Spread the spinach evenly over the turkey mixture.

13

Drizzle olive oil in the same pan and finely chop 7 mushrooms, frying for 5-7 minutes until golden.

14

Layer the mushrooms on top of the spinach.

15

Grate 5 ounces of Emmental cheese and sprinkle it over the top.

16

Carefully roll the turkey mixture into a log and wrap it in foil.

17

In a small bowl, mix 2 tablespoons of ketchup, 4 tablespoons of soy sauce, 1 teaspoon of grainy Dijon mustard, and 2 tablespoons of honey to make a marinade.

18

Brush the roll generously with the marinade and seal it tightly in foil.

19

Place it on a baking tray and bake in a preheated oven at 360°F (180°C) for 1 hour.

20

Check the potatoes; when a knife slides in easily, drain the water and add 30 grams of butter, 2 cloves of grated garlic, 2 tablespoons of cream cheese, and 30 grams of grated Parmesan cheese.

21

Chop a bunch of green onions finely and mash the potatoes until smooth and fluffy, adding ½ teaspoon of salt and ½ teaspoon of pepper.

22

After 50 minutes, remove the turkey roll from the oven, unwrap the foil, and brush it with the remaining marinade.

23

Return it to the oven uncovered for another 10 minutes to caramelize the glaze.

24

Slice the roll into thick pieces and serve alongside mashed potatoes and cherry tomatoes.
