Boil and peel the eggs beforehand.

Make cuts in each boiled egg with a knife.

Mix a pinch of spices (turmeric, chili powder, salt) into the eggs gently.

Preheat 1/2 cup of sunflower oil in a pan.

Add all the spices (chili powder, coriander powder, turmeric, garam masala, salt) and mix.

Add a little bit of water and cook for 7 to 8 minutes until the oil separates from the mixture.

Add yogurt (2 to 3 tablespoons) and mix well, ensuring the oil separates again.

Add the fried eggs to the curry and mix gently to coat the eggs with the masala.

Garnish with chopped coriander before serving.
