Gaufres Bruxelloises, or Brussels Waffles, originated in Belgium and are a beloved street food, often enjoyed with toppings like whipped cream and fruit. They are lighter and crispier than their Liège counterparts, thanks to a yeast-based batter. Traditionally served at fairs and markets, these waffles have gained popularity worldwide, becoming a staple in breakfast menus and dessert offerings.

Sieve all purpose flour, baking powder, salt into a large mixing bowl.
Add sugar to the dry ingredients and mix with a whisk.
Separate 2 medium sized eggs, placing the yolks with the dry ingredients and the whites in a clean bowl.
Measure out 1/3 cup of vegetable oil and pour it into the bowl with the dry ingredients and egg yolks.
Add vanilla and 2 cups of whole milk to the mixture and whisk until just combined.
Whip the egg whites until stiff peaks form, about 2-3 minutes with a hand mixer.
Gently fold the whipped egg whites into the waffle batter with a wooden spoon.
Heat up a Belgian waffle iron and spray with non-stick spray or brush with melted butter.
Scoop about 3/4 cup of batter into the center of the waffle iron, close the lid and cook for 5-10 minutes.
Check the waffle halfway through cooking, remove when crispy and golden brown.
Serve immediately with whipped cream, berries, icing sugar, and maple syrup.
