Marinated Salmon Sashimi

Sashimi, a traditional Japanese delicacy, features fresh, raw fish sliced into thin pieces. Marinated salmon sashimi enhances the natural flavors of the fish with a savory-sweet marinade, often enjoyed as a refreshing appetizer. This dish embodies the Japanese ethos of simplicity and quality, celebrating the freshness of the ingredients. Today, sashimi is appreciated worldwide, with various marinades and presentations reflecting local tastes.

Rice vinegar provides acidity without added sugar.

Vegetable oil is more neutral and less expensive.
Start by making the marinade: combine 10 tablespoons of soy sauce, 10 tablespoons of water, and 4 tablespoons of sugar in a pot.
Bring all the marinade ingredients to a boil over medium-high heat and boil for 1-2 minutes until the sugar is dissolved.
Cool the marinade completely after boiling.
Thinly slice garlic and red chili (or substitute with onion or chili pepper).
Add the garlic and chili to the warm marinade.
Cut the salmon fillet into small pieces, but do not slice too thin.
Place the salmon pieces in a tight container and refrigerate while waiting for the marinade to cool.
Once the marinade is cool, pour it over the salmon in the container.
Refrigerate the salmon for at least 6 hours to allow the sauce to be absorbed.
After 6 hours, remove the salmon from the marinade and serve it as a side with steamed rice and seaweed.
