Soak brown rice in water, then drain and add fresh water.

Add bay leaves, bouillon powder, salt, and pepper to the water and stir.

Let the mixture simmer.

Add soaked lentils and water, and cook until tender, then set aside.

In a pan, heat oil and cook yellow and red onions until caramelized.

Add cumin and salt to the onions.

Remove bay leaves from the lentil and rice mixture, then add 2/3 of the caramelized onions and mix.

Serve garnished with dairy-free yogurt and the remaining caramelized onions.
