Chicken skin is lower in fat while still providing crunch.

Fill a pot with 3 liters of water.

Add 3 tablespoons of salt to the water.

Add 3 large cloves of garlic and 1/2 onion to the pot.

Cover the pot and bring to a boil, then let it simmer for about 40-50 minutes to soften the pork belly.

After 40-50 minutes, remove the pork belly from the pot and drain the water.

In a separate pot, heat pork lard until it's hot.

Add the pork belly to the hot lard and fry for 5 minutes until crispy.

While the pork belly is frying, prepare guacamole by mashing avocados until smooth.

Once the pork belly is golden and crispy, remove it from the lard and let it cool slightly before serving.
