Caprese Skewers

2 bunches fresh basil
2 8-ounce containers mini fresh mozzarella balls
cherry tomatoes
extra virgin olive oil
kosher salt
fresh ground pepper
balsamic glaze

Prepare a large rectangular serving platter.

Drain the water from the mini mozzarella balls and rinse them with cold water, then pat dry with paper towels.

Place the drained mozzarella balls into a small mixing bowl.

Drizzle in some extra virgin olive oil.

Add a small quarter teaspoon of kosher salt to the mozzarella balls.

Add another 8-ounce container of fresh mozzarella to the bowl.

Sprinkle in fresh ground pepper and mix everything together.

Take a cherry tomato and skewer it with a knotted bamboo pick.

Add a basil leaf onto the skewer after the cherry tomato.

Skewer a mozzarella ball next, followed by another basil leaf.

Finish the skewer with another cherry tomato.

Repeat the assembly process until all ingredients are used or desired skewers are made.

For presentation, add more basil leaves to the platter.

Drizzle balsamic glaze over the assembled skewers in a swiggly line.
