Chicken Stir Fry with Bell Peppers

Slice 1 pound of boneless skinless chicken breast paper-thin after freezing for about an hour.
Chop 3 to 4 cloves of garlic finely.
Slice 1 small onion into half moons after removing the skin.
Thinly slice 3 to 4 scallions, using both the white bottoms and green tops.
Prepare 4 cups of broccoli florets, chopping the stems if using a whole head.
In a medium-size spouted cup, mix 2 tablespoons of cornstarch with 2 tablespoons of water to create a slurry.
Add 1/3 cup reduced sodium soy sauce, 1/2 cup low-sodium chicken broth, 2 teaspoons grated ginger, 1 tablespoon coconut sugar, 2 teaspoons toasted sesame oil, and a few pinches of red pepper flakes to the slurry and whisk until combined.
Heat a large sauté pan over medium heat and add 1 tablespoon of coconut oil.
Once the oil is melted, add the sliced chicken to the pan, spreading it out. Cook for 2 to 3 minutes on one side, then flip and cook for another 2 to 3 minutes until opaque and cooked through.
Remove the chicken from the pan and set aside.
In the same pan, add the sliced onions, garlic, and half of the scallions. Stir and cook for 2 to 3 minutes until fragrant.
Add the broccoli florets and a splash of water to the pan. Cover with a lid (if available) to steam the broccoli until bright green.
Once the broccoli is cooked, return the chicken to the pan along with the sauce. Stir everything together until well combined and let it simmer for 5 to 6 minutes until heated through and the broccoli is tender.
Turn off the heat and sprinkle the remaining scallions over the top for crunch.
Serve the stir-fry over brown rice or cauliflower rice.
