1/4 cup brown sugar
2 tablespoons corn starch
1/2 cup water
2 cloves garlic
1/2 cup low sodium soy sauce
2 tablespoons cider vinegar
1 pound thinly sliced chicken breasts
1 tablespoon oil
1 cup uncooked brown rice
2 cups frozen stir-fry vegetables

In a bowl, mix together brown sugar, corn starch, water, garlic, low sodium soy sauce, and cider vinegar.

Whisk the mixture until well combined.

Pour the mixture into a saucepan and boil until thickened.

Set the thickened teriyaki sauce aside.

Heat oil in a pan.

Add thinly sliced chicken breasts to the pan and cook for about 5 minutes.

Add garlic, water, and the thickened teriyaki sauce to the chicken and stir.

Bring the mixture to a boil.

Once boiling, add uncooked brown rice and bring back to a boil.

Reduce heat to low, cover, and simmer until the rice is cooked.

After about 5 minutes, add frozen stir-fry vegetables to the pan.

Cover and heat the vegetables for another 5 minutes until heated through.
