Teriyaki Chicken Stir Fry

4 chicken thigh fillets
5 cloves garlic
1/4 cup teriyaki sauce
1 onion
1 carrot
a little bit of broccoli
red capsicum
cashews
splash of oil

Prepare ingredients: cut chicken thigh fillets, slice onion into strips, cut carrot into thin sticks, chop broccoli (including stems), and dice red capsicum.

Marinate chicken with half of the chopped garlic and about 1/4 cup of teriyaki sauce.

Heat the wok until hot and add a splash of oil.

Cook half of the marinated chicken in the hot wok until browned, about a couple of moments.

Remove the chicken and add the remaining garlic and onion to the wok.

Add a little bit of water to the wok to help cook the onion and garlic.

Add the carrot sticks and broccoli to the wok, cooking quickly to keep them crunchy.

Return the cooked chicken to the wok, including any juices.

Add the red capsicum and stir everything together, allowing the teriyaki sauce and garlic to combine with the ingredients.

Just before serving, add the cashews to the stir fry to keep them crunchy.

Serve the stir fry over cooked rice.
