1/4 cup Mirin
1/2 cup Water
1/4 cup Brown Sugar
1.5 Tbs Ginger (grated)
1-2 cloves Garlic (grated)
1-2 Tbs Cornstarch (mixed with equal parts water)

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.

Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.

Stir in the mixed vegetables and cook for another 3-4 minutes until they are tender-crisp.

Pour the teriyaki sauce over the chicken and vegetables, stirring to coat evenly.
