Finely chop the small yellow onion and set it aside.
In a large mixing bowl, add 1 pound of ground beef, 1 pound of ground pork, 3 tablespoons of unseasoned breadcrumbs, the chopped onion, 1 medium or large egg, 1 tablespoon of Dijon mustard, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1/2 teaspoon of paprika.
Using clean hands, mix everything until well combined. If the mixture feels overly wet, add a few more breadcrumbs.
Form approximately 14 to 16 small meatballs in the palms of your hands and set them aside on a plate.
Preheat the air fryer to 380 degrees Fahrenheit.
Place the meatballs in the air fryer basket, leaving space between them. Cook in batches if necessary.
Cook the meatballs for about 13 to 15 minutes until fully cooked and browned on the outside, flipping them halfway through.
Check the internal temperature of the meatballs to ensure they reach 165 degrees Fahrenheit using an instant-read thermometer.
Remove the cooked meatballs from the air fryer and place them on a plate lined with paper towels to absorb excess grease.
Drain the grease from the air fryer, wipe it clean, and cook the second batch of meatballs until done.
Garnish the meatballs with chopped parsley and serve as an appetizer, with a dipping sauce, or in another dish like pasta.
