Add sliced tomatoes to the mixture and cover the pan, cooking for about 5 minutes until tomatoes are softened.

Turn down the heat and add boiling water from the kettle, enough to cover the mixture.

Cover and let it cook for about 15 to 20 minutes until potatoes are tender.

After 20 minutes, add the boiled broad beans to the pot.

Cook for an additional 10 minutes until the curry thickens and is done.

Garnish with fresh coriander before serving.
