Tostones are a popular snack or side dish in Puerto Rican cuisine, made from green plantains that are twice-fried to achieve a crispy texture. They are often served with garlic sauce or as a side to various main dishes. This dish reflects the influence of African and Caribbean culinary traditions, showcasing the versatility of plantains in tropical regions.

Zucchini is lower in calories and potatoes are more budget-friendly.
Heat oil on medium high heat in a deep fryer or frying pan.
Peel plantains and angle cut each one into 5 equal pieces.
In a bowl add the hot water, lemon juice, salt and set aside.
Lightly brown the plantains in the oil (approximately 3 min).
Remove the plantains from the oil and flatten each plantain using the tostonera.
Soak the flattened plantains in the hot seasoned water and carefully back in the oil for an additional 5 min.
Remove plantains from oil and place them on a paper towel to remove the excess oil.
Serve hot.
