Grind 10 g of whole cardamom into a fine powder.
In a bowl, combine 205 g of fresh yeast with 250 g of cold water and 250 g of cold milk.
Add 150 g of sugar to the mixture.
Cut 200 g of cold butter into small pieces and add it to the bowl.
Add 6 g of salt and between 850 g to 900 g of all-purpose flour, starting with 850 g.
Mix until the consistency is smooth, adding more flour if necessary.
Cover the bowl with plastic wrap and let it rest for 30 minutes.
After 30 minutes, sprinkle some flour on the table and knead the dough.
Form the dough into a ball, cover it again, and let it rise for another 30 minutes.
Roll out the dough to about half a centimeter thick.
Take 200 g of softened butter that has been at room temperature for 2-3 hours and mix it with 200 g of sugar and 20 g of ground cardamom.
Spread the butter mixture evenly over the rolled-out dough.
Fold the dough into thirds and roll it out again.
Cut the dough into strips approximately 2 cm wide, weighing about 50 g each.
Twist each strip into a bun shape, ensuring they are all the same size.
Crush some whole cardamom pieces and mix them with about 20 g of sugar, then sprinkle this mixture over the buns.
Cover the buns and let them rise until they double in size, about 1 to 1.5 hours.
Prepare a syrup by boiling 75 g of water and 70 g of sugar with a split vanilla pod for 20 minutes, then let it cool and remove the vanilla pod.
Preheat the oven to 250°C (482°F) for 30 minutes before baking the buns.
Bake the buns for about 10 minutes, watching closely to prevent burning.
Once golden brown, remove the buns and brush them with the syrup.
