Roll out the rested dough into thin sheets.
Cut the dough into squares, about 3 inches each.
Place a spoonful of the meat mixture in the center of each square.
Fold the squares into triangles and pinch the edges to seal tightly.
Bring a large pot of salted water to a boil.
Drop the dumplings into the boiling water and cook until they float, about 5-7 minutes.
Remove the dumplings with a slotted spoon and drain.
Serve hot, topped with yogurt, parsley, and a sprinkle of red pepper flakes.
