Preheat oven to 200 degrees Celsius.
Slice the red onion and mushrooms.
Boil water in a pot for the potatoes and green beans.
Add 5-6 peeled and chopped potatoes to the boiling water.
Cook potatoes until tender, about 15-20 minutes.
In a separate tray, place the pork sausages and drizzle with olive oil to prevent them from exploding during cooking.
Place the sausages in the oven to cook.
While the sausages are cooking, heat olive oil in a skillet over medium heat.
Add sliced onions and mushrooms to the skillet and cook until caramelized, about 10-12 minutes.
Remove the onions and mushrooms from the skillet and set aside.
In the same skillet, add the lambs liver slices and cook until browned, about 5-7 minutes, turning occasionally.
Meanwhile, check the potatoes; drain them once tender and mash them until creamy with a masher.
Season mashed potatoes with salt and pepper to taste.
In the boiling water, add the green beans and cook until tender, about 4-5 minutes.
Drain the green beans and toss with a little olive oil, salt, and pepper.
Serve the lambs liver and sausages on a plate with creamy mash and green beans on the side.
