1 cup pineapple, diced

1 lb chicken thigh, diced

1/4 cup mint, chopped
1/4 cup coriander leaf, chopped
2 medium tomatoes, diced
2 limes, juiced
2 cups bean sprouts
3 cloves garlic, minced
2 tablespoons sugar
2 tablespoons vegetable oil or peanut oil
2 fresh chilies, sliced

Thaw homemade chicken stock from the freezer.

Gather ingredients: pineapple, fish sauce, fried shallots, fresh chili paste, tamarind juice, chicken thigh, basil, mint, coriander leaf, tomatoes, limes, bean sprouts, garlic, sugar, and oil.
