Measure and add 4 cups of flour to a mixing bowl.
Add 2 teaspoons of sugar and 2 teaspoons of salt to the flour.
Add 1 tablespoon of lemon juice to the mixture.
Add 2 tablespoons of turmeric for color.
Add 1/2 cup of softened butter to the mixture.
Combine all ingredients until the turmeric is mixed in well.
Gradually add cold water to form a soft dough, mixing until it comes together.
Transfer the dough to a floured surface and knead it until soft.
Wrap the dough in plastic wrap and refrigerate for 1 hour.
Prepare the filling by browning 2 and 1/4 pounds of lean ground beef in a pan, draining any excess liquid.
Chop onion, celery, and tomatoes, and blend them in a food processor until fine.
Transfer the blended vegetables to a bowl and repeat the process with any remaining vegetables.
Add 2 cloves of garlic, 4 scallions, red and green peppers, and chopped carrots to the food processor and blend until fine.
Combine the pureed vegetables with the browned beef in a bowl and mix well.
Let the meat mixture sit for a few minutes to marinate.
In the same pan used to brown the beef, add 2 tablespoons of olive oil and 2 tablespoons of butter.
Add the meat mixture to the pan and season with black pepper, pepper sauce, and a tablespoon of red pepper.
Add salt, paprika, and molasses to the mixture for flavor and color.
Stir in bronzing to achieve the desired color and adjust seasoning as needed.
Cook the meat mixture on medium heat until fully cooked, stirring occasionally.
