Tuna patties, or tuna cakes, are a beloved dish in the Maldives, reflecting the country's rich fishing heritage. Traditionally made with fresh catch, these patties are a staple in local households, often served as a snack or light meal. In modern cuisine, variations have emerged globally, incorporating different spices and ingredients, making them a versatile dish enjoyed in many cultures.

Open 2 cans of albacore tuna and flake it up with a fork in a mixing bowl.
Lightly whisk 1 egg in a separate bowl before adding it to the tuna.
Add mayonnaise to the bowl with the tuna and egg.
Sprinkle in panko breadcrumbs and mix until combined.
Zest and juice the lemon, adding both to the mixture while ensuring no seeds fall in.
Add chopped parsley, salt, and black pepper to the mixture and stir until well combined.
If the mixture feels too loose, add more panko breadcrumbs to help it hold together.
Form the mixture into palm-sized patties, shaping them like crab cakes.
Melt butter with olive oil in a skillet over medium-high heat until shimmering.
Carefully place the patties in the skillet and cook for about 2-3 minutes until golden brown and crispy.
Flip the patties and cook for another 2-3 minutes until golden brown on the other side.
Transfer the cooked patties to a platter and serve on a bed of pea shoots with a lemon wedge and sauce.
