Baked Tilapia with Potatoes and Carrots

Coconut oil is dairy-free and adds a unique flavor.
Cut the potatoes into thick slices, about 6 on each side.
Cut 2 cups of baby carrots in half and place them in a large bowl with the sliced potatoes.
Melt 4 tablespoons of butter or margarine and mix in minced garlic, Italian seasoning, and seasoning salt to taste.
Squeeze the juice of one lemon into the mixture and stir well.
Mix the potatoes and carrots with the butter mixture using hands for better coating.
Transfer the mixture into a glass cooking tray and add additional seasonings on top.
Preheat the oven to 375°F (190°C).
Place the tray in the oven and bake for about 30 minutes.
Slice half of a small onion and some peppers thinly.
In a bowl, mix 3 tablespoons of melted margarine with the same seasonings used for the potatoes, adding lemon pepper.
Add the sliced onion and peppers to a foiled lined glass tray, mixing in half of the seasoning mixture.
Season 7 tilapia fillets with lemon pepper and seasoning salt on top only.
Layer the tilapia on top of the onions and peppers in the tray.
Sprinkle grated parmesan cheese on top of the tilapia and add the remaining seasoning mixture.
After 30 minutes, mix the potatoes and carrots to keep them moist.
Add the tilapia tray to the oven and bake for an additional 15 minutes.
After 15 minutes, sprinkle fresh cilantro on the tilapia and broil on high for 5 minutes.
Total cooking time for the potatoes and carrots is 55 minutes, and 20 minutes for the tilapia.
