1 kg Red & ripe Tomatoes
3-4 tbsp Cooking oil
3 medium (200g) Onions, finely chopped
3 tbsp Garlic, finely chopped
1 tbsp Green chilli, finely chopped
3 medium (350g) Tomatoes, finely chopped
½ tbsp Himalayan pink salt or to taste
½ tbsp Crushed red chilli
1 tsp Crushed black pepper
2 tsp Paprika powder
1-2 tbsp Fresh coriander, chopped
1 tbsp Cooking oil
4-5 Eggs

Crushed black pepper to taste
Olper’s Cheddar Cheese as required
Olper’s Mozzarella Cheese as required
Fresh coriander, chopped

In a pot, add water & heat it.

Remove the head of tomatoes, make a small cut on the bottom of tomatoes with the help of a knife then add in hot water & blanch for 12-15 minutes.

Let them cool.

Remove tomato skin, add in blender jug & blend well to make a puree & set aside.

In a wok, add cooking oil, onion, garlic, mix well & sauté until light golden.

Add green chilli, tomatoes, mix well & cook on low flame for 12-15 minutes.

Add pureed tomatoes, pink salt, red chilli crushed, black pepper crushed, paprika powder, fresh coriander & mix well, cover & cook on low flame for 10-15 minutes & keep mixing in between.

Let it cool (Total Yield: approx. 1 kg).

In a non-stick frying pan, add cooking oil, thawed prepared tomato mixture & mix well.

Add eggs one by one, sprinkle pink salt, black pepper crushed, add cheddar cheese, mozzarella cheese, cover & cook on low flame until cheese melts & eggs are done (2-3 minutes).

Serve with bread!
