Shrimp and Lobster Fried Rice

Prepare ingredients: cut up 1 medium carrot, chop 2 spring onions, and half each of shallots, white onion, and red onion. Also prepare yellow, green, and red bell peppers, 2 eggs, and cooked lobster.

Season the shrimp with thyme, lemon, sea salt, garlic powder, green seasoning, and seafood seasoning. Mix well and let marinate for about 10 minutes.

Heat about 1 tablespoon of oil in a pot and scramble the 2 eggs for 1-2 minutes until cooked. Remove the eggs from the pot.

Add a little more oil to the pot and sauté the onions on low to medium heat until translucent.

Add the chopped carrot to the onions and cook for about 1-2 minutes.

Add the bell peppers and sweet corn to the pot. Season with vegetable seasoning (about 2 teaspoons, as needed). Cook for a total of 5 minutes.

Push the vegetables to one side of the pot and add the seasoned shrimp to the other side. Cook the shrimp for about 2-3 minutes, flipping halfway until pink.

Remove the shrimp from the pot and add the cooked lobster to heat it up with the vegetables.

Add the cold cooked rice to the pot with the vegetables and lobster. Pour about 1 tablespoon of soy sauce and 1 tablespoon of oyster sauce over the rice and mix well.

Add the scrambled eggs and shrimp back into the pot along with chopped spring onions. Mix everything together and adjust soy sauce to taste if desired.
