300 grams sugar
150 grams corn flour
10-15 grams lemon juice
30 grams water (divided into two parts)

250 grams water
100 grams icing sugar
50 grams corn flour (for coating)
20 grams water (for red color)
2 teaspoons red food color
1 teaspoon rose flavor

Start by adding 300 grams of sugar to a pot.

Add 30 grams of water and 15 grams of lemon juice to the pot with sugar.

Stir continuously until the sugar dissolves completely.

Check the temperature; it should not exceed 115 degrees Celsius.

Once the temperature reaches around 114 degrees Celsius, remove from heat and set aside.

In a separate bowl, mix 150 grams of corn flour with 120 grams of water until smooth to avoid lumps.

Cook this mixture on medium flame while stirring continuously until it thickens.

Gradually add the previously prepared sugar mixture into the corn flour mixture, stirring constantly.

Transfer the mixture into a small pan and cook on low flame, stirring occasionally, until it turns golden in color (approximately 30 minutes).

Once it reaches a golden color, add the rose flavor and red food color mixture.

Continue to cook for another 4-5 minutes on low heat.

Grease a container with oil to prevent sticking.

Pour the mixture into the greased container and let it cool for about 1 hour at room temperature.

Once cooled, place it in the fridge for quicker cooling if needed.

Prepare a dusting mixture of 100 grams icing sugar and 50 grams corn flour, and sift it together.

Once the lokum has set, cut it into pieces and coat with the dusting mixture.
