This dish is commonly served during family gatherings and special occasions, embodying the warmth of Guatemalan hospitality. Today, it has gained popularity beyond its borders, with variations appearing in other Central American cuisines.

Welcome to the kitchen, today we are making delicious Hilachas Guatemaltecas.
Using 3.5 lbs of beef for shredding, season it with salt and black pepper.
Place the beef in a pot with water and add 3 cloves of garlic and 3 bay leaves.
Cook the beef for about 1.5 hours until tender.
Remove the beef from the pot, saving the cooking water.
In the same pot, add 4 tomatoes, 1 red bell pepper, 2 potatoes, 1 carrot, and the remaining garlic to cook.
Remove the seeds from the guajillo chiles and ancho chile, then add them to the pot with the vegetables.
Blend the cooked vegetables with some of the reserved cooking water until smooth.
Return the blended mixture to the pot with the beef.
Add 1 teaspoon of beef bouillon and stir to combine.
In a separate pan, heat a little olive oil and sauté the green onions until caramelized.
Combine the sautéed onions with the beef mixture and adjust seasoning if necessary.
Toast the tortilla until slightly crispy to thicken the dish.
Serve the Hilachas hot with the toasted tortilla on the side.
