Boil the chicken thigh in water until cooked through.
Remove the chicken, shred it, and set aside.

Add shredded chicken back to the pot and season with soy sauce, black pepper, and vinegar.
Simmer for a few minutes to combine flavors.
Thicken the soup with corn starch mixed in water if desired.
