Slice the stale bagels thinly using a rotary grater instead of a bread knife for better results.

Line baking sheets with parchment paper.

Add a thin layer of the sliced bagels to the baking sheets, ensuring no overlapping for even toasting.

Spray the bagel slices with olive oil, ensuring they are nicely coated.

Sprinkle a fine seasoning, like salt-free garlic and herb, over the bagel slices.

Bake the bagel slices in the oven at 400°F until they are golden brown and crispy.

Thinly slice about three scallions or green onions for the dip.

Chop about three or four slices of crispy bacon to add to the dip.

In a bowl, combine 8 oz of whipped cream cheese with 1/2 cup of sour cream.

Add the chopped bacon and scallions to the cream cheese and sour cream mixture.

Add about a tablespoon of everything but the bagel seasoning to the mixture and stir until well combined.

Transfer the dip to a serving bowl and top with additional scallions, bacon, and everything but the bagel seasoning.
