Instructions
- 1Grate the potatoes and onion into a large bowl.
- 2Add eggs, flour, minced garlic, salt, and black pepper to the bowl.
- 3Mix the ingredients until well combined.
- 4Heat vegetable oil in a skillet over medium heat until shimmering.
- 5Spoon a portion of the potato mixture into the hot oil, flattening slightly.
- 6Fry until golden brown, about 3-4 minutes per side.
- 7Remove fritters and drain on paper towels.
- 8Serve warm with sour cream and sprinkle with fresh herbs.

Instructions
- 1In a mixing bowl, combine the all-purpose flour and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 30 minutes.
- 2In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
- 3Add the boiled and mashed potatoes, peas, coriander powder, turmeric powder, garam masala, chili powder, and salt. Mix well and cook for 5 minutes. Stir in chopped cilantro and remove from heat.
- 4Divide the dough into small balls. Roll each ball into a small circle.
- 5Place a spoonful of the potato filling in the center of each circle. Fold the dough over the filling and seal the edges to form a dumpling.
- 6Bring a pot of water to a boil. Carefully drop the dumplings into the boiling water and cook for about 10-12 minutes or until they float to the surface.
- 7Remove the dumplings with a slotted spoon and let them drain.
- 8Serve hot with chutney or sauce of your choice.

- 7Remove the fried bhajis with a slotted spoon and drain on paper towels.
