Return the beef to the skillet and add broth, vinegar, coriander, and cumin; simmer for 10 minutes.
Cook the hand-pulled noodles in boiling water until tender, about 5-7 minutes.
Drain the noodles and divide them among serving bowls.
Top the noodles with the beef and vegetable mixture.
Garnish with chopped green onions and a drizzle of sesame oil before serving.
