Crispy Chilli Tofu

400g firm tofu
1/4 cup cornstarch
1/2 tsp salt
1/2 tsp black pepper
1/4 cup vegetable oil
2 cloves garlic, minced
1 inch ginger, minced
2-3 green chilies, sliced
1/4 cup soy sauce
1 tbsp rice vinegar
1 tbsp sugar
1/4 cup chopped green onions
sesame seeds for garnish

Press the tofu for 30 minutes to remove excess moisture, then cut it into bite-sized cubes.

In a bowl, mix cornstarch, salt, and black pepper. Toss the tofu cubes in the mixture until evenly coated.

Heat vegetable oil in a large pan over medium-high heat. Add the tofu cubes and fry until golden and crispy on all sides. Remove and set aside.

In the same pan, add garlic and ginger, sautรฉing for about 30 seconds until fragrant.

Add the sliced green chilies and stir-fry for another minute.

In a small bowl, mix soy sauce, rice vinegar, and sugar. Pour this sauce into the pan and bring to a simmer.

Add the crispy tofu back into the pan, tossing to coat it in the sauce.

Cook for an additional 2-3 minutes until the sauce thickens slightly.

Remove from heat and garnish with chopped green onions and sesame seeds before serving.
