Crispy Dosa

1 cup mashed potatoes
1/2 tsp garam masala
1/4 tsp red chili powder
1/4 cup chopped onions
1/4 cup chopped cilantro

In a mixing bowl, combine 1 cup rice flour, 1/4 cup urad dal flour, 1/2 tsp salt, 1/2 tsp cumin seeds, and 1/4 tsp turmeric powder.

Gradually add 1 1/2 cups water to the flour mixture, whisking until you achieve a smooth batter.

Let the batter rest for 30 minutes.

Prepare the filling by mixing 1 cup mashed potatoes, 1/2 tsp garam masala, 1/4 tsp red chili powder, 1/4 cup chopped onions, and 1/4 cup chopped cilantro in a bowl.

Heat a non-stick skillet over medium heat and lightly grease it with oil.

Pour a ladleful of batter onto the skillet and spread it in a circular motion to form a thin layer.

Drizzle a little oil around the edges and on top of the dosa.

Cook until the edges start to lift and the bottom is golden brown, about 2-3 minutes.

Place a portion of the potato filling in the center of the dosa.

Fold the dosa over the filling and cook for another minute until crispy.

Remove from the skillet and repeat with the remaining batter and filling, adding more oil as needed.

Serve hot with chutney and sambar.
