Heat a large cast iron griddle until hot.

Rub the hot griddle with a little bit of oil using a wad of paper towels or a cloth.

Pour about 1/3 cup of the dosa batter onto the griddle and spread it lightly with a ladle.

Cook until the edges start to come off the griddle and the batter is golden brown with bubbles forming, about 3 minutes.

Optionally, add a little oil around the edges for extra crispiness.

Flip the dosa and cook for another minute on the other side until done.
