Brown beef in a large pot over medium heat until browned, about 5-7 minutes.
Remove beef and set aside; add chopped onion to the pot and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add tomato paste and cook for 2-3 minutes, stirring frequently.
Return beef to the pot and pour in water; bring to a boil.
Reduce heat and simmer for 1-1.5 hours, until beef is tender.
Add rice and spices; stir well and continue to simmer for 20-25 minutes.
In a separate bowl, blend walnuts with a little broth until smooth.
Incorporate walnut mixture into the soup and stir well.
Add lemon juice, salt, and pepper to taste; simmer for an additional 5 minutes.
Remove from heat and stir in chopped parsley and cilantro before serving.
