Chop the beef finely using a chopper until very fine.
In a bowl, combine 2 tablespoons ginger-garlic paste, salt, and 0.5 teaspoon garam masala, and blend well.
Add 1.5 large crushed onions to the mixture, ensuring they are dry.
Chop 0.5 bunch of cilantro and 1-2 green chilies and add them to the mixture.
Add 1 teaspoon baking soda to the mixture for texture.
Add 2 tablespoons of ghee to the mixture for flavor.
Mix all ingredients thoroughly until well combined.
Refrigerate the mixture for 30-40 minutes to firm up.
Wet your hands to shape the mixture onto skewers, pressing firmly to ensure they hold together.
Shape the kebabs according to your preferred size, ensuring they are not too thick.
Place the shaped kebabs on skewers, ensuring they are secure and will not fall apart during cooking.
You can also bake these kebabs in the oven if preferred.
Cook the kebabs on one side for 5-7 minutes, then flip and cook for another 5-7 minutes until done.
Remove from heat and let rest before serving.
