Chana Dal Tadka

1 cup chana dal (split chickpeas)
3 cups water
1 medium onion, finely chopped
2 green chilies, slit
1 tsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp cumin seeds
2 tbsp ghee or oil
1 tsp mustard seeds
Salt to taste
Fresh coriander leaves for garnish

Rinse the chana dal under running water until the water runs clear.

In a pot, add the rinsed chana dal and water. Bring to a boil, then reduce heat and simmer until the dal is soft, about 30-40 minutes.

In a separate pan, heat ghee or oil over medium heat. Add cumin seeds and mustard seeds, and let them splutter.

Add the chopped onions and green chilies to the pan. Sauté until the onions are golden brown.

Stir in the ginger-garlic paste and sauté for another minute until fragrant.

Add turmeric powder and salt to the onion mixture, stirring well to combine.

Once the chana dal is cooked, drain any excess water and add it to the onion mixture. Mix well and cook for an additional 5-10 minutes to blend the flavors.

Garnish with fresh coriander leaves before serving.
