1 teaspoon garam masala
1 teaspoon chat masala
1 teaspoon dried mango powder
1 teaspoon kasuri methi
1/4 cup fresh cilantro
2 tablespoons butter

Soak chickpeas for 8-10 hours.

Cook soaked chickpeas in a pressure cooker with water, garam masala, a bay leaf, and salt until tender.

In a bowl, mix 1/2 kg all-purpose flour with salt, 1 tablespoon sugar, and 2 tablespoons yogurt.

Add 1 packet of ENO (fruit salt) to the flour mixture.

Knead the dough with warm water until soft and let it rest for 10-15 minutes.

In a kadhai, heat oil and add 1 teaspoon cumin seeds, chopped garlic, green chili, and ginger.

Cook kulche on a hot tawa, adding water to steam and cover until puffed up, then apply butter on both sides.
