½ tsp cumin seeds (jeera)
½ tsp black or yellow mustard seeds (sarso)
½ tsp nigella seeds (kalonji)
¼ tsp fennel seeds (saunf)
6–7 fenugreek seeds (methi)
2 dry red chilies
2 bay leaves
72 gm / 1 small onion, thinly sliced
1 tsp turmeric powder
½ tsp red chili powder
1 tsp cumin powder
1 tsp coriander powder
1 heaped tsp grated ginger
Salt to taste
Fresh cilantro, chopped (for garnish)
6 tbsp oil (divided)
1 ¼ cups hot water (adjust as needed)
