1

Soak the long beans in room temperature water for 1 hour.

2

Prepare the fish cake by frying it in a pan with a bit of cooking oil until golden brown, about 2-3 minutes on each side, then let it cool on a rack.

3

Cut the long beans into 1.5-inch pieces and rinse them.

4

Cut the tomatoes into small pieces after removing the stems.

5

Squeeze the lime for juice, using one lime for now.

6

In a clay mortar, pound 8 pieces of bird's eye chili and 2 cloves of garlic until fine.

7

Add in the shrimp paste and pound until incorporated.

8

Add the long beans to the mortar and pound until they are slightly smashed, about 3 minutes.

9

Add 1 tbsp of sugar, 1 tbsp of fish sauce, and 1.5 tbsp of lime juice, then continue to pound and mix with a spatula.

10

Taste the mixture and adjust seasoning with 3/4 tbsp of fish sauce and 1/2 tbsp of sugar if needed.

11

Add the cut tomatoes and pound for about 15 seconds to mix.

12
