Mix 480 ml of water with 6 g of dry yeast until the yeast dissolves.

If using fresh yeast, use 24–25 g instead of 6 g dry yeast.

Add 650 g of bread flour and 8 g of salt to the mixture.

Add 40 g of soft butter and mix until the butter disappears into the dough.

If baking right away, cover the dough and let it rest at room temperature for 2 hours.

If baking later, rest the dough in the refrigerator for 12–18 hours.

Dust the dough with flour and gently scrape it with a spatula without pressing.

Open the dough gently with your hands, fold it, and roll it.

Seal the seams well if you don’t want cracks; otherwise, leave them unsealed.

Place the dough on a baking tray and cover it to rest for 30 minutes.

Be careful not to over-rest the dough, as it won’t rise and may collapse.

For steam, place a bowl of boiling water on the bottom of the oven.

Bake at 210°C / 410°F for about 30 minutes.
