30g walnuts
10g coconut flakes
10g coconut sugar
1/4 tsp salt
2 tsp ground cinnamon (optional)
20g rice bran oil
50g brown rice malt syrup
1 tsp vanilla extract

Combine 1 cup puffed quinoa, 1 cup GF rolled oats, 30g pepitas, 30g almonds, 30g walnuts, 10g coconut flakes, 10g coconut sugar, 1/4 tsp salt, and 2 tsp ground cinnamon (optional) in a bowl.

Incorporate 20g rice bran oil, 50g brown rice malt syrup, and 1 tsp vanilla extract into the mixture and combine well.

Transfer the mixture to a prepared pan.

Firmly pack the mixture in the pan to make crispy bars, pressing down using a spatula for an even layer.

Bake at 150℃ in the preheated oven for 40 minutes, rotating the pan halfway through baking.

Let it cool for 10 minutes in the pan as it is soft and fragile right after baking.

Take it out of the pan and let it cool completely on a wire rack.

Slice it into 8 pieces (or as you like) carefully using a bread knife.

If desired, add melted dark chocolate on top.
