Heat a large pan and add a little bit of water to the bottom.
Put the washed spinach into the pan and cover it; let it simmer gently for about 2 minutes until wilted completely.
Drain the spinach after it has wilted.
In a separate pan, heat 2 teaspoons of vegetable oil.
Add 1/2 teaspoon of cumin seeds to the oil and fry for 1 minute.
Add the sliced onions and garlic paste to the pan; stir-fry until the onions are golden.
Once the onions are golden, add in 1/2 teaspoon of garam masala and stir for 30 seconds.
Add the drained spinach and a small knob of ghee to the pan; fry for about 5 minutes.
Serve the spinach bhaji.
