Tawa Pulao

4 cups water
1 cup rice
4 medium Kashmiri chillies
1 cup hot water
1/2 inch ginger
1/4 tsp roasted cumin powder
1 medium cube salted butter
1 Tbsp oil
1 inch grated ginger
1 cup shredded cabbage
1/2 diced green capsicum
1/2 carrot (julienne)
3 or 4 French beans
1 medium tomato
1/4 cup green peas
2 tsp pav bhaji masala
1 tsp salt (to taste)
1 Tbsp lime juice
butter cubes
coriander (for garnishing)

Prepare rice by boiling 4 cups of water and adding 1 cup of rice. Cook until done.

For the red chilli paste, soak 4 medium Kashmiri chillies in 1 cup of hot water, blend with 1/2 inch ginger and 1/4 tsp roasted cumin powder until smooth.

In a pan, heat 1 Tbsp oil and add 1 medium cube of salted butter.

Add 1 inch of grated ginger, 1 cup of shredded cabbage, 1/2 diced green capsicum, 1/2 julienned carrot, 3 or 4 French beans, and 1 medium tomato. Sauté until vegetables are tender.

Add 1/4 cup of green peas and 2 tsp of pav bhaji masala. Mix well.

Add the cooked rice and 1 tsp of salt (adjust to taste). Stir to combine.

Finish with 1 Tbsp of lime juice and garnish with butter cubes and coriander.
