Tawa Pulao

3 cups plain rice (cooked)
2 cups tomatoes (chopped)
1 cup potatoes (cubed into small pieces)
1 cup cauliflower floret (in small pieces)
1/2 cup green peas (frozen)
1/4 cup carrots (cubed into small pieces)
1 Tbsp ginger (thinly sliced)
1 Tbsp green chili (cut into small pieces)
3 Tbsp oil
1 tsp cumin seeds (jeera)
1/2 tsp red chili powder
1/4 tsp turmeric (haldi)
1-1/2 tsp salt
1-1/2 Tbsp fennel seed powder (saunf)
2 tsp garam masala
1 Tbsp lemon juice
1/4 cup cilantro (chopped, hara dhania)

Boil the vegetables, potatoes, cauliflower, carrot, and green peas in 2 cups of water till they are tender and not mushy. Drain the water and set aside.

Heat the oil in a wide flat frying pan on medium heat until moderately hot. Add cumin seeds; as they crackle, add tomatoes and cook until very soft and tender.

Add all the spices except garam masala: turmeric, red chili powder, fennel seeds, ginger, green chili, and salt. Mix well.

Add the boiled vegetables, mix, and let cook for a few minutes.

Add the cooked rice and mix gently. If it looks dry, add a little water and mix gently, letting it cook for a few minutes while stirring.

Turn off the heat, add garam masala, cilantro, and lemon juice, and stir gently to coat the rice and vegetables evenly.
