1/4 teaspoon Chef Paul Padam's Seafood Magic

To make shrimp stock, add 2 cups of water, 1/8 teaspoon of salt, 1/8 teaspoon of black pepper, 1/4 teaspoon of Tony Sacher's seasoning, and 1/4 teaspoon of Chef Paul Padam's Seafood Magic to a large pot, then add the shrimp heads and shells, cover with a lid slightly ajar, and simmer for 20 minutes while stirring occasionally.

Strain the shrimp stock through a mesh strainer to discard the shells, keeping the stock in a bowl.

In a measuring cup, mix 1/2 cup of cool water with 1 1/2 tablespoons of cornstarch and whisk until combined.

In a medium pot, combine 1/4 cup of shrimp stock, 1/4 cup of rice cooking wine, 3 tablespoons of soy sauce, the cornstarch mixture, 1 tablespoon of sugar, and 1/4 teaspoon of crushed red pepper flakes, stirring well and simmering for 1-2 minutes until thickened.

After thickening, turn off the heat and stir in the chopped ginger, letting the sauce cool for 10-15 minutes.
