Set a pan to medium heat and add olive oil to warm up.

Add 1 chopped medium onion and 1 chopped red bell pepper to the pan, along with 1 small jalapeno and 1 small serrano pepper. Cook for 5 to 6 minutes until the vegetables start to sweat and soften.

Add 3 cloves of minced garlic and stir to let it bloom. Add 1 tablespoon of paprika, 1 teaspoon of cumin, salt, pepper, and chili flakes. Cook for 30 seconds to 1 minute.

Add 2 cans of fire roasted tomatoes and a splash of hot sauce. Reduce heat and let simmer for at least 10 minutes, up to 30 minutes or longer if desired, adding water if it starts to dry out.

After simmering for over 20 minutes, add 3 tablespoons of fresh chopped cilantro to the sauce.

Crack 6 large eggs into the sauce, making indents with a spoon first. Spoon some sauce over the egg whites if desired. Cover and cook for 6 to 7 minutes until the egg whites are set.

Garnish with additional salt, pepper, chili flakes, fresh cilantro, and crumbled feta cheese before serving.
