Traditionally, it combines grilled lamb with a creamy eggplant puree, showcasing the rich culinary heritage of the area. In modern times, variations have emerged, but the essence of combining tender meat with smoky eggplant remains cherished.

Welcome to my kitchen. Today I have a beautiful recipe for you. I'm preparing köfteli alinazik.
First, let's prepare the köfte. I have about 300-400 grams of ground meat. I added some tail fat because my meat was lean.
I cracked one egg into the mixture.
I added about 2-3 tablespoons of stale bread, salt, red pepper, black pepper, and parsley.
I mixed this well. You can add a little water if needed; I added about 2-3 tablespoons and kneaded for 3-4 minutes.
After kneading, I let the köfte rest for about 10-15 minutes while I roast the eggplants.
I roasted the eggplants on the stove, but you can also do it outside on a grill, in the oven, or in an air fryer.
I turned the eggplants to roast them evenly until soft.
Now, I will shape the köfte. I greased my hands and took small pieces, pressing them into shape.
I set the shaped köfte aside.
After roasting, I put the eggplants in a bag to cool; this makes peeling easier. You can do the same with peppers.
I peel off the charred skin of the eggplants and chop them finely.
You can prepare alinazik with ground meat, köfte, or cubed meat, depending on your preference.
I place the chopped eggplant into a bowl.
I add some yogurt and one clove of garlic to the eggplant.
I also added a bit of salt to both the yogurt and eggplant and mixed them together.
Now, I will fry the köfte in hot oil, turning them occasionally until they are golden brown.
I added half a teaspoon of baking powder to the köfte mixture, which makes them puff up nicely.
After frying all the köfte, I used a copper plate for serving; it looks nice.
I arranged the eggplant on the plate, then poured the remaining yogurt on top.
I placed the köfte on top of the yogurt.
I also fried some green pepper and tomato in the same oil after frying the köfte, which adds great flavor.
I will place these on the side of the plate.
I prepared some melted butter with red pepper flakes to drizzle over the dish.
This makes a wonderful main dish. It's perfect for special occasions.
